Why roast coffee?
. Roasting brings out the aroma and flavor that is locked inside the green coffee beans. Coffee beans are stored green, a state in which they can be kept without loss of quality or taste. A green coffee bean has none of the characteristics of a roasted bean — it’s soft and spongy to the bite and smells grassy.

Cupulate is made from the almond of the cupuaçu (Theobroma Grandiflorum), a fruit typical of the Amazon and from the same genus as cocoa (Theobroma Cacao), which is why its name is similar to that of the famous chocolate. Despite having a flavor, texture and caloric composition similar to chocolate, cupulate offers a unique sensory experience, typically Amazonian. Since cupuaçu is from the same genus as cocoa, the external surface and shape of both fruits are different – cocoa is more elongated, has a rougher shell, and cupuaçu is more rounded and has a smooth shell. However, their internal almonds (the usable part of the seed) are very similar, even in appearance, and it is from this part that chocolate and cupulate are made. The two products have a similar texture, flavor and aroma, but cupulate is creamier, dissolving easily when eaten. “Another advantage of cupulate over cocoa chocolate is that the cupuaçu derivative has an almost non-existent caffeine content.
